Pumpkin Roasted Walnuts
Roasted nuts remind me of fall, the holidays, and street fairs. A month ago when I was home I bought a cone-shaped bag of pecans and knew I had to try making it for myself… But of course, I’ve always got to add a twist. It’s fall. Let’s add some pumpkin spice!
First time – - failed. This is what happened when I tried to make these in the oven. Now that doesn’t mean that you can’t make them in the oven. But it didn’t work for me. Examples 1, 2, 3, and all that you need to realize that I will not be making them in the oven anymore…
BECAUSE NOW I’VE GOT THE CROCKPOT RECIPE! (And so do you!)
Believe me. No stove. No oven… just your crockpot.
What you need -
1 Cup Sugar
1 Cup Brown Sugar
3 tbl Pumpkin Spice
3 Cups Nuts (Any kind you love)
1 Egg White
2 tsp. Vanilla
Directions -
Mix together sugar, brown sugar, pumpkin spice in medium-sized bowl. In a large bowl whisk egg white and vanilla until frothy. Mix nuts into egg and vanilla mixture coat evenly, then add sugar and continue to mix until all nuts are covered in the sugary goodness. Grease crockpot with butter/Crisco/spray, whatever you dig so it doesn’t stick.
Cook on low in crockpot for 2 hours stirring every half hour.
Spread evenly on a glass pan or wax paper until cool. Store in airtight container. (If it makes it that far!!!)

That’s my kind of recipe. Kind of reminds me of pralines. My mom always makes those around Christmas time and they are my absolute favorite!!
